4 cups herb-seasoned bread stuffing cubes 1 large winter squash (2 1/2 to 3 pounds) 2 tablespoons canola oil 2 leeks, white and light green parts only, sliced thin 1 medium onion, chopped 3 shallots, minced 3 medium portobello mushrooms, stems discarded and caps diced … Oh, and like someone said above, if you need to stay away from wheat , you could use a gluten - free rice cereal (I’m thinking Chex) to coat the eggplant.
